Sylvie

Hospitality

Sylvie is a seasonally exclusive pescatarian restaurant and cocktail bar just a block from the water’s edge in downtown Hobart. Founder and head chef Martin Dreyer celebrates the very best of local, ethical produce in his flavour-first venue.

What we did:

Colours and textures of the natural world– everything that influences and is of the landscape and seascape are right here in our refreshed Sylvie brand. The word mark flows like the rhythm and movement of the sea, while the richly nuanced colour palette includes Tasmania’s unique soil colours. It’s a restaurant where the vegetables enjoy equal billing with the seafood; a place where flavour always takes centre stage. There are people in there too, of course. And an interior that has also been locally and sustainably sourced. Every aspect of what Sylvie does and every skill and service it takes to enable it to happen are reflected and celebrated.

From all these dynamic assets that work in complex harmony, a simple, elegant truth emerges. An identity and character that is influenced by all but not overpowered by any of them. Although this is predominantly a visual response to the task, language plays an important supporting role. Lyrical, emotive but always firmly grounded in Tasmania, it is truth told simply but richly too. Raw beauty and the very stuff of life, shaped by tidal flow and seasons chased across the land, this brand embraces nature’s shifts and cycles.
